After Melissa's Sandwich post I thought some of you might like this recipe. We have been eating it non-stop for the last month. I found the original
here, but it had quite a kick. Some in my family don't like that much kick (Or any kick for that matter) so I tweaked it just a bit and came up with this. It still has all of the great flavor without the kick.
1 can or 2 c Garbanzo Beans
4 Oz Roasted Red Pepper (About 1 Red Pepper)
3 T Lemon Juice
1 T Olive Oil
1 1/2 T Cumin
1/2 t Salt
3 T Water
1 T Paprika
3 Garlic Cloves
Place all ingredients in food processor or blender. Blend until Smooth.
Use as a dip for veggies, a spread on sandwiches or any other way you might enjoy.
